These Kodiak pumpkin pancakes are similar to the Kodiak blueberry pancakes besides that I added a teaspoon of sugar.

The sugar takes off the sting of bitterness that I can style from the nutmeg. It is barely just a little bit and it's used extra as a spice than a real sweetener. For extra sweetness, add maple syrup or jam to the completed product.

Have you tried making Kodiak pumpkin pancakes? Do you utilize canned pumpkin in your baked items?
