Chicken soup is a wholesome consolation meals. You can’t say that about ice cream or potato chips (sadly). Most hen soups are pretty bland and have noodles and broth – which is fantastic more often than not.
This soup is each colourful and flavorful (a feast for the eyes and the stomach!). When I get tired of common hen noodle soup, I make this “Mexican” hen soup as a result of it's spicy and has corn as an alternative of noodles.
I freeze it in single serving containers for after I desire a gentle lunch (solely 216 energy per serving).
For my children, I add cheese and a few crushed tortillas as they want garnishes to get pleasure from this soup. You also can add sizzling sauce, avocadoes, cilantro, or black beans to create extra of a chili.
This soup retains nicely within the fridge and even improves over time.
